Crisp Baked Tofu Turmeric Burgers

300g pack Clearspring organic tofu

1 clove garlic crushed

1 red onion, small dice

3 spring onions, small dice

12 fresh shitake mushrooms, caps very thinly sliced, discard the stems

¼ cup roasted red pepper, diced (organic jar)

1 tbsp. tamari

1 tbsp Seaweed Agogo Asian herb mix

¼ tsp ginger powder

¼ tsp. onion powder

½ cup fresh coriander leaves, minced

2 tbsp. black sesame seeds

2 cups breadcrumbs


4 Sourdough burger buns

Lettuce leaves mixed with rocket leaves

Relish & Sauerkraut



Preheat the oven to 200/400°. In a large bowl, mash the tofu with the back of a fork. Warm a splash or two of water in a heavy based wok.  Add the garlic, onion, spring onions, mushrooms, red pepper, tamari, seaweed agogo mix and spices. Mix well, cover and cook on a low flame for 8-10 minutes, add a splash of water if the pan is dry. Remove from the heat and stir in the coriander. Add the mixture to the tofu bowl along with the sesame seeds and breadcrumbs. Mix well until you have a consistency that sticks together. If the mixture is too dry add a splash of water if too wet add a little flour and stir through. Shape mixture into 4 large burgers or 8 small ones. Place the burgers on a parchment lined baking sheet and bake 10 minutes either side.

Optional: Grill the buns, spread some vegan mayonnaise and add a mixture of salad greens, relish and sauerkraut.
